quinoa greek salad

Ingredients
1.5 cups quinoa2 bell pepers1 lb chicken breast cooked and cubed1 large tomato1 english cucumber1 large avocado1/2 cup greek salad dressing with feta cheese
Directions
cook quinoa (3 cups water to 1.5 cups quinoa, boil water then add quinoa and drop to a simmer and place lid on pot, simmer for about 15 mins until all water is absorbed and quinoa is cooked)

Dice all veggies and chicken

Rinse quinoa in cold water until cold

Mix all ingredients together in a bowl

Serving Size: about 8 servings
