Cauliflower Pancakes - fake potato pancake

Ingredients
Ingredients:Egg, fresh, 1 large Cauliflower, raw, 1 cup *cheese shredded mozzarella, 0.25 cup Onions, raw, .25 cup, dicedSalt, 1 dashPepper, black, 1 dash Optional - Pam spray
Directions
Prepare the cauliflower - shred cauliflower (chop in food processor or use the shred disc in the processor). Or shred by hand using a grate. Cauliflower will be the consistency of rice. Microwave cauliflower on HIGH in an uncovered container for 10 minutes. Let cool for a few minutes.

Pancake Prep - Add 1/4 cup shredded cheese (I prefer mozzarella), 1 egg , diced onion and salt and pepper to cooked cauliflower.

Spray non stick skillet with PAM spray. Heat skillet to medium. Add mixture to skillet and spread around pan to form a pancake. Brown each side of the pancake.

Serve with sour cream garnish or fresh ricotta.
