Crock Pot Chicken and Wild Rice Soup

3 cups water1 can reduced sodium chicken broth1 can reduced fat and reduced sodium cream of chicken soup2/3 cup uncooked wild rice, rinsed and drained1 cup sliced raw carrots1/2 tsp dried thyme, crushed1/4 tsp ground black pepper3 cups chopped cooked chicken breast (approximately 1 lb.)2 cups shredded fresh spinach
In a slow cooker, combine all ingredients except the fresh spinach.
Cover and cook on low for approximately 8 hours or use a high heat setting for 3 1/2 hours
Stir in spinach when done, serve!
Makes 6 servings ( 1 & 1/2 cups per serving)
