Blueberry Cranberry Nut Zucchini Bread

3 eggs1 cup applesauce, unsweetened1.5 cups honey2 T. vanilla extract2 cups shredded, unpeeled zucchini1 cup crushed pineapple, well drained1 cup fresh blue berries1/3 cup chopped walnuts2/3 cup Craisins3 cups whole wheat flour2 t. baking soda1/4 t. baking powder2 t. ground cinnamon1 tsp. nutmeg1 tsp. salt
Beat eggs, applesauce, honey, and vanilla, then mix in zucchini and pineapple. Mix in dry ingredients, then fold in blueberries, nuts, and Craisins with a spoon. (Don't mash the berries!)
Pour into a 9x13 pan and bake 45 minutes or until set in the middle.
