Potato Salad

Ingredients
3 lbs. small white potatoesSalt1 C. mayo1/4 C. buttermilk2 Tbsp. dijon2 Tbsp. whole-grain mustard1/2 C. chopped fresh dillPepper1/2 C. chopped celery1/2 C. chopped onion
Directions
Place potatoes and 2 Tbsp. salt in large pot of water. Bring water to a boil, then lower heat and simmer for 10-15 minutes, until potatoes are barely tender when pierced with a knife. Drain potatoes, then place colander with potatoes over empty pot and cover with clean, dry kitchen towel. Allow potatoes to steam for 15-20 minutes.
Meanwhile, in small bowl, whisk together mayo, buttermilk, dijon, mustard and dill, 1 tsp. salt and 1 tsp. pepper. Set aside.
When potatoes are cool, cut them in quarters. Place potatoes in large bowl. While potatoes are still warm, pour enough dressing over them to moisten. Add celery and onion, 2 tsp. salt and 1 tsp. pepper. Toss well, cover, and refrigerate for 2-3 hours. Serve cold.
