Steve's Canned-Tomato Tomato Soup

Ingredients
2 14.5oz cans of diced tomatoes1 clove of garlic, minced1/4 cup chopped raw onion1 medium carrot, chopped1 tsp olive oilred pepper flakespepper & thyme to tastebalsamic vinegar6oz. vegetable broth/stock plus water
Directions
In deep pan heat oil; then saute garlic, onion, and carrot until fragrant and softened, several minutes.

Add tomatoes with liquid, stir to combine and reduce. Add sugar, pepper & thyme, and red pepper flakes to taste. With an immersion blender puree mixture. Slowly add vegetable stock and simmer ~10 minutes. Add vinegar, stir, and serve.
