Lemon Blueberry Muffins

Ingredients
*Whole Wheat Flour, 1 cup*Flour, white, .66 cupSugar, .5 cupBody Fortress Super Advanced Protein Powder VANILLA, 1 servingBaking Powder, 2 tspSalt, .5 tsp*Skim Milk, 1 cupApplesauce, unsweetened, 2 TbspOlive Oil, 2 TbspLemon juice, 2 TbspEgg, fresh, 1 largeGrated Lemon Rind, 1-2 tspVanilla Extract, 1 tspBlueberries, frozen (unsweetened), 1.33 cup, unthawed
Directions
Preheat oven to 375. Spray muffin tins with cooking spray. In a small bowl stir together milk, oil, applesauce, lemon juice, egg, lemon rind, and vanilla extract.
In a large bowl, combine flours, protein powder, sugar, baking powder, salt and cinnamon.
Pour the liquid mixture into the flour mixture and stir just until moistened.
Fold in blueberries. Pour batter into muffin cups filling each 2/3 full. Bake 20 minutes or until golden.
