Turkey Sausage and Shrimp w/Yellow Confetti Rice

1 TBSP Olive Oil1/2 package of smoked turkey sausage1 can of fat free chicken broth (1.6 Cups)1 5oz package of yellow rice2 c. frozen mixed veggies8oz shrimp
In a medium pot heat oil on med.high heat.
dice smoked sausage into 1/4" cubes
add to oil.
brown.
deglaze pan with chicken broth
add rice mix
stir, cover and reduce heat to med
cook for 15minutes
uncover.
reduce heat to low
add veggies and shrimp (cut into 1/4" pieces)
cover and let steam for an additional 5 minutes.
when veggies are warmed and shrimp are pink, stir and fluff...and EAT!!!
makes 4 1/2-8oz servings
