Salmon Patties with Cucumber Sauce

Ingredients
Sauce:2/3 cup diced cucumber2/3 cup plain low fat yogurt1/4 tsp dried dillweed2 cloves garlic, crushedPatties:1 14 oz. can salmon, drained1 15 oz can chick peas, drained1 cup fresh bread crumbs1/4 cup sliced olives (optional)1/2 cup chopped fresh parsley2 tbsp lime juice1 tsp tabasco1/2 tsp cumin1/4 tsp salt2 egg whites1 tbsp vegetable oil, divided
Directions
1. Prepare sauce by combining cucumber, yogurt, dill, and garlic in a small bowl.
2. Remove bones and skin from salmon. (for faster prep time, use prepackaged salmon that is already deboned). Place chickpeas in a medium bowl; partially mash chickpeas with a fork. Stir in salmon, bread crumbs, and olives (optional). Combine parsley and remaining ingredients (except oil) in a small bowl. Stir in salmon mixture. Shape mixture into 12 patties, each 3/4 inch thick.
3. Heat 1 to 1 1/2 teaspoons oil in a large nonstick skillet over medium high heat. Add 6 patties; cook 4 minutes. Carefully turn patties over and cook 4 minutes more or until golden. Repeat procedure with 1 1/2 teaspoons oil and remaining patties. Serve with sauce.
Makes 12 patties.
