Janet's Tomato Sauce

Ingredients
5 Whole ripe Tomatos1/2 cup Chopped Red Bell Peppers1/2 cup Chopped Green Bell Peppers1/4 cup Chopped Onions1/4 cup Mushrooms2 Garlic Clove Minced1 Tbsp Fresh Parsley1 Tbsp Olive Oilblack pepper and salt to taste
Directions
Boil some water in a large pot and while the water is boiling, with a knife make an "X" on the bottom of each tomato, this is to help you peel the skin after boiling them for 1 minute. After boiling the tomatos place them in ice cold water for another minute to stop the cooking process then peel them and chop them. Sometime between all this you can chop all your other ingredients. In a large pan heat the olive oil on medium heat then grill the garlic and onion for a minute them add the bell peppers and muchroom until they are tender. Add the chopped tomatos at the end, throw in the parsley black pepper and salt. Simmer for 30 minutes and serve oven pasta, meatballs or whatever you want. Enjoy!
