Cheesy Zucchini Tots

Ingredients
3 cups tightly packed shredded zucchini (sqeezed dry)4 eggs1 cup finely diced onion1 cup whole wheat breadcrumbs1 cup shredded sharp cheddar cheesesalt and pepper to taste
Directions
Mix all ingredients up and bake in mini muffin tins lightly sprayed with Pam at 400 for 15-18 minutes or until golden and bubbly. Take pans out of oven and let cool for about 10 minutes before removing. Slide a spatula/butter knife around edges to pop them out easily. If you want them extra crispy you can then toss them on a cookie sheet and bake an additional 5-10 minutes at 350 right before you serve them. Makes 36 tots.
