Moist Banana Bread

Ingredients
1 1/2 cups flour2/3 cups sugar2 teaspoons baking powder1/2 teaspoon baking soda1/4 teaspoon salt3 ripe bananas, mashed2 tablespoons butter or margarine (I used Smart Balance)4 tablespoons unsweetened applesauce2 tablespoons milk1 teaspoon banana extract2 eggs
Directions
In a large bowl, mix all dry ingredients (except 1/2 cup of flour). Add bananas, butter/margarine, milk, eggs, applesauce, and banana extract. Mix until combined. Add remaining flour and mix. Pour in a greased loaf pan and bake at 350 for 50-55 minutes.

Makes aprox. 11 1/2 inch slices of yummy banana bread.

For variety, I also sprinkle in cinnamon, nutmeg and cloves.
