New York Cheesecake

Ingredients
2 tbsp butter12 graham crackers, crushed4 (8oz) packages cream cheese1 1/2 cups sugar3/4 cup half and half4 eggs1 cup sour cream1 tbsp vanilla1/4 cup flour
Directions
Combine crackers and melted butter. Press into 10 inch spring form pan.
Beat softened cream cheese and sugar until no lumps remain, scraping bowl often.
Pour in half and half, beat until smooth.
Add eggs one at a time until completely combined.
Add sour cream, vanilla, and flour. Mix thoroughly.
Bake 325'F for 1 hour. Turn off oven, leave cake in oven with the door closed for 5-6 hours until cool. DO NOT OPEN DOOR! Remove from oven after 5-6 hours and cool until ready to serve.
