Spicy Black Bean Burger (recipe from Dashing Dish)

Ingredients
Ingredients2 (19.75 oz) Cans black beans, drained and rinsed (keep separated)1/4 cup Red onion, chopped2 tbs Diced jalapeños, (I used canned)1 Egg white1/2 cup Corn (canned or fresh)1/4 cup Shredded Mozzerella1 tsp Garlic, chopped1 pkt Stevia1/4 tsp Salt1/2 cup Oats 1Optional Topping Ideas: Low sugar ketchup, mustard, low fat mayonaise, shredded lettuce, thinly sliced swiss or cheddar cheese, salsa
Directions
Preheat oven to 375 degrees. Line a baking pan with foil (for easy clean up), and spray with non-stick cooking spray.

Combine all of the ingredients, except for 1 can of beans in a blender or food processor. Blend/puree until mixture is just smooth, (don’t over mix).

Scoop mixture into a medium size bowl, and stir in the remaining can of beans. Stir until combined.

Get hands wet, and form mixture into six patties on baking sheet, (mixture will seem a bit wet, but wet hands should keep it from sticking to you while you shape the patties). Bake burgers for 20-25 minutes, or until firm to the touch. Add a slice of cheese on top of each burger in the last few minutes of cooking if desired!
