Quinoa, Black Bean & Avocado Salad

Salad:Quinoa, 1 c dry (4 c cooked)1 can black beans1 avocado, chunked1 c tomato, chunked1 bell pepper, chunked1 teaspoon garlic, mincedcilantro to tasteDressing:juice of 1/2 lemon1/2 tablespoon olive oil1/2 teaspoon cumin
Prepare 1 cup dry quinoa to package instructions.
While it cooks, drain & rinse beans and chop produce.
When quinoa is cooked, let cool 10 minutes, then combine with all salad ingredients.
Whisk together oil, lemon juice, and cumin. Mix in to salad.
Serve and enjoy!
Serving Size: makes about 10 1-cup servings, or 20 half-cup servings
