Chili Lime Chicken

2-6 oz boneless, skinless chicken breast4 oz chicken broth2 tsp garlic powder2 tsp chili powder1-2 limes, freshly squeezed 1 plum tomato3 tbsp fresh cilantroA dash of garlic powder and chili powder 5 tbsp chopped onion1 lime freshly squeezed1 cup brown rice (cook as directed on packaging)1 medium stalk of broccoli steamed1 oz blue cheese
Take a zipper storage bag big enough for the chicken, chicken broth, lime, chili powder and garlic powder.
Mix the spices, lime juice and the chicken broth together, add the chicken and let sit for 1-2 hours.
When it is done you can either BBQ it or bake it. While the chicken is cooking start your rice.
Prepare the broccoli to steam.
Start on the fresh salsa, dice the tomato, add chopped onion and cilantro, and dash of chili powder and garlic powder and lime juice, I add a bit of red chili flakes to give it a spicey bite!
Start your broccoli steaming about 10 minutes before the chicken is done.
When everything is ready, start the plating with 1/2 cup of rice, lay your chicken over the top of the rice, put half of the blue cheese on the chicken and top with the fresh salsa. (For an extra boost I use some of the juice from the baked chicken, if you BBQ the chicken just bring some of the marinade to a boil for about a minute then pour over your chicken and rice.)
Do not forget your broccoli.
IMPORTANT NOTE!!
Because the flavor of limes is sometimes overpowering , be sure to taste the maranade after adding some of the lime juice, that way you do not add too much and and overpower the marinade.

We had this for dinner last night.It was very tasty! Husband and son loved it.I like blue cheese, but don't feel like it added anything to this dish, however, my husband was ecstatic about it.I also left out the cilantro, because we are not fans of it; I added a little green pepper to the salsa. - 1/3/08

Absolutely delicious! Thank you. I also used fresh garlic in both the chicken and the salsa and fresh chili and mango in the salsa. I omitted the blue cheese and added a dash of spicy mango sauce on top of the chicken. Plus I added chokoes and green beans to the brocolli. Even my kids ate it!! - 4/26/07
