Von's Couscous

Ingredients
1/3 cup dry couscous1/2 cup diced tomatoes1/2 cup diced green peppers1/2 cup diced red onions1/2 cup chopped carrots1 cup water1 tbl coconut oil1/2 tbl chopped garlic (about 3 cloves)1/2 tbl salt
Directions
Bring water, salt, and coconut oil to boil. Remove from heat, and then stir in couscous. Place lid on pot and let sit for 10 minutes. Dice tomatoes, red onions, green peppers, carrots, garlic, and mushrooms. When couscous is cool, stir in all vegetables and garlic. Serve cold or at room temperature.
