Dairy Free Chicken & (Fake) Cheese Taquitoes

1 lb chicken breast1 pack Daiya Pepperjack cheese1 pack of extra thin yellow corn tortillaOlive Oil Spray
Preheat oven to 350.
Boil the chicken breasts. Once cooked cook and shred into a gallon zip lock bag.
Pour in cheese and shake.
Spray olive oil into a pan and warn up the corn tortillas. 10 seconds on each side.
Add 2T of stuffing into the tortilla and roll up. Place in casserole pan with the seam side down. Repeat until all tortillas are wrapped up.
Heat in oven 10-15 minutes until cheese is melted and tortilla is crunchy.
Serving Size: makes 24 pieces
