Mango Lime Quinoa Salad

Ingredients
2 cups cooked Quinoa2 cups diced mangos1/2 cup frozen corn kernels1 red bell pepper, seeded and diced1 large tomato, diced3 tbsp virgin olive oil2 tbsp apple cider vinegar1 tbsp red wine1 tbsp dried cilantrojuice from 1 lime
Directions
Combine quinoa, mangos, frozen corn, diced red pepper and tomato in large bowl. Season with cilantro and lime. In a separate bowl, combine olive oil, vinegar and red wine. Whisk together to form a vinaigrette. Pour on top of salad. Stir until combined. Refrigerate for approx 1 hour before serving.

Serving Size: Makes approximately 10 servings (about 1/2 cup per serving)
