Healthy Quinoa Salad

Ingredients
1 c. dry quinoa1 whole zucchini, sliced/cubed1 red bell pepper, diced1 can red kidney beans, drained2 limes, juiced4-5 T of fresh, chopped cilantro3 T olive oildash of pepper to taste
Directions
Rinse quinoa in strainer, then cook with 2 c. water. When boiling, turn heat to med/low and simmer for about 12 minutes covered. Fluff and let cool. Add all other ingredients and toss. Chill or serve right away. There are many possible add ins/substitutions with this recipe, and many foods taste great and create a great healthy meal/side dish.
