1- boneless, skinless chicken breast, cooked and chopped1/2 cup onion, chopped1/2 cup red, green or yellow pepper, chopped1/4 cup celery chopped1- large potato peeled & cubed2- tablespoons Canola oilTOPPINGS2% Kraft shredded Mexican Blend CheeseWholly GuacamoleLight Sour CreamSalsa (We like El Pato)OPTIONALWarmed flour tortillas or large lettuce leaves
Warm skillet with Canola oil till hot. Add potatoes and onions, cook, stirring often, till semi-tender and lightly browned. Add celery and pepper and stir till tender. Add cubed chicken and cook till warmed through. Serve sour cream, cheese, salsa, and guacamole on the side.
