Ginger soy chicken skewers

500 grams chicken (3 medium breasts) 2 medium red peppers, large dice6-12 cherry tomatoesPineapple (1/2 can chunks)1/2 cup soy sauce1 T brown sugar3 t sliced fresh ginger root
Prep:
Slice chicken breasts in half, and then in quarters. Mix together the soy sauce, brown sugar, ginger root, and juice from the pineapple to make a marinade. Soak the chicken for 45 minutes or longer, shaking or stirring occasionally for full coverage.
When ready to barbecue, thread four pieces of chicken onto each skewer, alternating with chunks of pepper, cherry tomatoes, and pineapple. Cook on the grill for 15-20 minutes or until the chicken is done.
