Banana Wheat Germ Muffins

Ingredients
3 eggs3/4 cup brown sugar, packed1 cup oil3 cups mashed bananas3/4 cup white sugar3 cups whole wheat flour3 tsp. baking powder3 tsp. baking soda1 tsp. salt3 cups wheat germ (or natural bran or combination of)2 tsp. vanilla extract
Directions
Mix first 5 ingredients together well. Measure flour, baking powder, baking soda and salt into a separate bowl. Mix dry ingredients together. Add dry ingredients to wet mix. Stir quickly, just until all ingredients are moist. Fold in wheat germ and vanilla. Pour into greased muffin pans and bake in 375 degrees for 20 minutes. Makes 4 dozen medium muffins.
May add walnuts, coconut, chocolate chips but not calculated into the nutrition.
