Refrigerator Bran Muffins

1 cup vegetable oil1 cup sugar6 eggs1/3 cup molasses3 cups 2% milk5 cups natural bran3 cups whole wheat flour2 tsp. baking powder2 tsp. baking soda1 tsp. salt1 cup raisins (can sub dried apricots/dates or nuts but not in the nutrtion calculation)
In large bowl, beat together oil, sugar and eggs until well mixed. Add remaining ingredients and stir until combined. Cover and refrigerate for uip to six weeks. Spoon batter into greased muffin pans and bake at 400 degrees for 15 to 20 minutes or until firm to touch. Makes 48 medium muffins.
NOTE: I leave out the raisins in the initial prep and then when I bake a dozen I add in any of the following: dried cranberries, frozen blueberries, cocount, almonds, walnuts, sesame or sunflower seeds, or dates)
