Ingredients
1 red pepper1 onion2 sticks celery, chopped1 carrot, grated2 tbs olive oil1/2 of 15 0z. can diced tomatoes1 C white ricewater for rice1/4 C salsa1 vegetable bullion cube
Directions
Sautee chopped pepper, onion, celery and grated carrot in oil until veggies soften. Add salsa and tomatoes, simmer a few minutes Add rice and 1 1/2 C water, bring to a boil, drop in bullion cube and cover, turn to low. Simmer, stirring once to mix bullion, until rice is done, about 20 minutes. Service hot.
