Chicken Saute

Ingredients
6 boneless skinless chicken breastssalt & pepper to taste6 oz clarified butter2 oz onions, small dice2 cloves garlic minced15 oz chicken stock2 tsp lemon juice6 oz tomatoes, concasse5 leaves fresh basil, chiffonade
Directions
Season chicken lightly with salt & pepper. Dredge in flour, shaking off excess. Heat clarified butter in large saute pan. Add chicken and brown on all sides. Do this in batches, making sure not to overcrowd pan. Remove from pan & reserve in warm place. Add onions & garlic to pan & brown, adding additional clarified butter if neccessary. Deglaze the pan with 3 oz stock & lemon juice. Add tomato concasse and chicken stock. Reduce by 1/4 or desire consistency. Return chicken to pan & add basil. Simmer until chicken is cooked. Adjust seasoning with salt & pepper.
