Date Cookies

Ingredients
1 cup rolled oats1 and 2/3 cup walnuts 1 and 1/3 cup brown rice flour1 tsp sea salt1 and 1/2 tsp cinnamon6 Tbsp olive oil1/3 cup brown rice syrup1/2 cup maple syrup (can reduce to 1/3 if desired)1 cup pitted finely chopped dates or figs
Directions
Makes 33-35 tablespoon sized servings.

Preheat oven to 325.

Spread oats and walnuts side by side on a cookie sheet. Toast in oven for 10 minutes.

Put half of the oats and walnuts in a food processor and grind to a fine meal. Add the rest of the oats and pulse a few times. Pour into mixing bowl. Add the rest of the oats and the salt and cinnamon. Mix well.

In another bowl, mix the olive oil and syrups. Combine well with a fork.

Mix the wet ingredients into the dry and stir very well.

Fold in the dates last.

Spoon in tablespoon sized balls onto cookie sheets lined with parchment paper. Bake 15-18 minutes.
