Butter, salted, 2 tbspRed Potato, 200 gramsMushrooms, fresh, 100 gramsOnions, raw, .25 medium (2-1/2" dia) Broccoli, fresh, .5 stalk Gypsy pepperRed Ripe Tomatoes, .75 cup cherry tomatoes Trader Joes Turkey meatballs, 4, cut into small pieces and already thawedEgg, fresh, 6 large Half and half, 3 Tbsp(scrambled together)Parmesan Cheese, grated, 3 tbsp, for toppingAll veggies should be diced!
Heat oven to 425 degrees. Melt butter in a square baking dish. Put potatoes into hot buttered dish, cook for about 6 minutes. Add mushrooms and onion and cook for another 8 minutes. Add broccoli, pepper, and tomatoes, cook for 10 minutes. Add the cut up turkey meatballs. Poor the eggs mixed with the half and half over and allow to settle evenly. Bake until set, about 10 more minutes.
