1 lb. smoked sausage, sliced thin1 lb small red potatoes, sliced1 - 3 shallots sliced 2 ears fresh corn or 2 c frozen1t salt1t black pepper1/2 t dried thyme2 T olive oil1-1/2 T butter
Heat large skillet on med high heat, add oil. Sautee shallots and potatoes in oil until potatoes are starting to brown. Season with salt, pepper and thyme. Add sausage and continue cooking until potatoes are tender. Add corn and butter. Turn heat to low and steam covered for 5 min.
