Low-Carb Broccoli Cheddar Soup

Broccoli, carrots, celery, onion, butter, veggie broth, cheddar, cream, cream cheese, almond flour.
Dice onion, carrot and celery. Melt 1/2 of the butter in a large saucepan, and saute mirepoix mixture until soft. Set aside. In the same pan, melt the other butter, and whisk in the almond flour until smooth. Slowly add cream. Add veggie broth, let simmer for 10 minutes. Add mirepoix and broccoli (diced). Let simmer another 25-30 minutes, or until broccoli is soft and the liquid has been reduced by 10%. Blend in food processor or blender, put back into saucepan. Add shredded cheddar and cream cheese, allow to melt.
