High Fiber Bread

Ingredients
1/4 c. raw barley1/4 c. raw brown rice1/4 c. raw quinoa1/4 c. rolled oats1/4 c. flaxseed1/2 c. whole wheat flour1 1/2 packages dry yeast1/4 c. brown sugar1/2 c. warm water + 1 3/4 c. warm water4 T. unsalted butter1 T. salt3 1/2-4 c. flour1 egg white1 T. waterpinch salt
Directions
1. Grind first 6 ingredients in food processor until fine.
2. Sprinkle yeast over 1/2 c. warm water and a generous pich of brown sugar. Stir. Let stand until foamy (10 min.)
3. Whisk 1 3/4 c. warm water, brown sugar, melted butter, salt and the ground mixture. Beat until creamy (1 min.). Add yeast mixture and 1 c. flour. Beat 1 min. Add remaining flour 1/2 c. at a time. Knead for 3 min. Place in greased bowl and cover with plastic wrap. Let rise until doubled. (1 1/2-2 hours).
4. Divide dough in two. Place in greased loaf pans. Cover with loose plastic wrap. Let rise until double (45 mins.)
5. Slash tops. Make egg wash with egg white, water and salt. Brush tops of loaves. Sprinkle with sunflower seeds.

Bake at 400 degrees for 35-40 min.

Makes two loaves with approx. 15 slices per loaf.
