Savoury lentil and chicken sausage stew

1 Tbsp Coconut oil1 cup onion, chopped1 cup carrot, chopped1 med tomato, chopped1 Tbsp sageChicken Sausages (12 oz)green lentils (about 2 cups, soaked for 6 hours, then cooked in 2 cups water for 30 minutes)
Boil soaked green lentils in 2 cups water (adding salt and pepper to taste) until soft (about 30 minutes). In a separate medium-sized pot, saute onions in coconut oil til soft, then brown sausages in same pot. Add carrots, tomato, and sage and briefly heat while stirring. Add lentils and the water they were cooked in to the sausage pot. Simmer uncovered on low heat for 15 minutes. Sausages can be removed and chopped into bite-size pieces and returned to pot before serving if so desired.
