Salmon Patties

Ingredients
I can Pink Salmon (14oz)2 large eggs1/2 - 1 cup chopped onion12-18 Saltine Crackers (crushed very well)1 teaspoon black pepper
Directions
Open can of Salmon, don't drain. Put salmon in a large bowl and mash with fingers to smash up meat, bones and skin and mix to consistency. Add eggs, chopped onion and pepper and mix completely with fingers. Mix crushed crackers into salmon mixture and form into about 8 patties.

Add oil to a large skillet and turn up heat to high. When oil is hot, add patties to skillet and cook on each side for about 4-5 minutes - until they are browned on each side.

Serve with whatever condoment you desire (ketchup is a favorite). Also serve with a big salad.
