Super Skillet Rice Pilaf

1 cup white rice1 tbsp salted butter1/5 cup chopped scallions1 1/2 cups home-made strained chicken stock1 tbsp olive oilGarlic powder
Melt butter in medium skillet that has a lid. Add scallions, cook until soft.
Add rice and stir, over medium heat, until most of the rice has browned. Add garlic powder to taste. Heat chicken stock in a pot or the microwave, add to skillet, cover and cook for 15-20 mins over medium heat, stirring occasionally so nothing sticks to the bottom. When the rice is tender and the liquid has been absorbed, add olive oil and stir thoroughly.
Fluff and serve with citrus-seasoned chicken breast and perhaps a veggie side dish.
