Artichoke Nibbles

Ingredients
- 2 jars marinated Artichoke Hearts (can substitute with non-marinated)- 1 sm. Onion, chopped fine- 1 clove Garlic, minced- 4 eggs (can substitute with egg beaters)- 1/4 c. fine, dry Bread Crumbs- 1/4 tsp. Salt- 1/8 tsp. Oregano- 1/8 tsp. Pepper- 1 C. Sharp Cheddar Cheese, shredded- 2 Tbsp. Minced Parsley
Directions
- Drain marinade from the artichoke/jar into frying pan, add onion & garlic, saute 5 mins.

- In a bowl, beat eggs and add bread crumbs, salt, pepper, oregano & tabasco.

- Add grated cheese, parsley, chopped artichokes and the sauteed onion mixture.

- Put into a sprayed 7x11 pan, bake at 325 degrees, 30 minutes.

- Cut into 1" squares

- Serve warm or cold
