Orange-Cranberry Muffins

10 oz can pumpkin2 1/2 c sugar2/3 c olive oil1/4 c soy milk, unsweetened4 cage free brown eggs2 1/2 tsp vanilla extract2 tsp grated organic orange peel (must be organic so you are not eating pesticide flavored peel).1 1/2 cups unbleached white flour1 1/2 cups whole wheat flour1/2 tsp baking powder2 tsp baking soda1/2 tsp salt1 c cranberries, chopped1/2 cup walnuts, chopped1/2 c raisins
350 degree oven.
Beat first seven ingredients in a bowl.
Mix flour, baking soda, baking powder, salt in a small bowl.
Mix dry ingredients into wet ingredients.
Fold in cranberries, raisins, and nuts.
Pour into prepared loaf pan and bake for 60 mins.
OR
Pour into prepared muffin pan until 1/2 to 2/3 way up the section. Cook 15-30 minutes.
