Herb Roasted Fingerling Potatoes

Ingredients
1 lb Fingerling potatoes2 T EVOO1/4 tsp Kosher salt, or to taste.Fresh herbs of your choice.
Directions
1. Preheat oven to 425
2. Collect the leaves from your herbs, chopping the large ones, until you have at least 1 T. Use more to taste, if you chose.
3. Wash, dry, and cut potatoes in half.
4. Mix potatoes, oil, salt, and herbs together until well coated.
5. Transfer to a roasting pans and spread in a single layer.
6. Roast for 20-25 minutes, flipping after 10 minutes.

Serving Size: 4 servings of about 4 oz.
