Smokey Buffalo Burger

Ingredients
12 oz ground buffalo1/2 C wild rice - cooked1/2 C shredded cheese (1/4 C mozzarella, 1/4 C gouda)2 Tbsp barbecue sauce1 tbsp paprika2 tbsp dijon mustard1 tsp garlic, minced3/4 tsp pepper1/4 tsp salt1 tbsp low fat mayo1 tbsp sweet relish1 tsp horseradish
Directions
1. Place meat, rice, cheese, 1 tbsp barbecue sauce, paprika, mustard, garlic, pepper and salt in a large bowl. Gently combine, without overmixing, until evenly incorporated. Form into 4 equal patties, 1/2 to 3/4 inch thick.
2. Combine the remaining 1 tbsp bbq sauce, mayo, relish, horseradish in a small bowl.
3. Oil the grill rack. Grill the burgers until an instant-read thermometer reads 155 - 5 to 6 minutes each side.
4, Assemble the burgers on buns with barbecue mayonaise sauce, tomato and onion.
