Spelt with Veggies

Ingredients

1 small onion1/2 cup chopped broccoli1 medium carrot1 medium stalk celery30 grams firm tofu1/6 cup dry spelt (makes 1/2 cup cooked)1 tsp olive oilsalt black pepperground cinnamongarlic powderground cumin
Steam the broccoli half way
Sautee all the vegetables until they're slightly softer, then add the tofu.
Use all the spices in the list, but play with the amount according to your taste.
cover for about 7 minutes on medium heat.
Boil 1/3 cup water with a little salt and add the spelt. Cook covered on low heat for about 20 minutes (until it absorbs most of the water)
Drain the water left and add the spelt to the vegetables. Mix and eat.
Tastes also good cold.
