Zucchini Bread

Ingredients
1 cup brown sugar, firmly packed 1 cup sugar 1 cup unsweetened applesauce 3 eggs, beaten 1 tsp vanilla 2 cups raw zucchini, peeled and shredded 3 cups flour 1 tsp baking soda 1 tsp salt 1/4 tsp baking powder 3 tsp cinnamon
Directions
1) Heat oven to 350*
2) Coat 2 loaf pans with no stick cooking spray
3) In a large bowl, add brown sugar, sugar, applesauce, eggs, vanilla, and zucchini. Stir to combine.
4) Mix dry ingredients in a separate bowl and add to the wet mixture. Stir just until blended.
5) Pour batter into pans. Bake 8-inch loaves for 1 hour, 9-inch loaves for 50 min, or muffins for 20-25 minutes. A toothpick inserted in center should come out clean. Cool 10 minutes in pan. Remove to cool completely on a cooling rack.
