4 eggs1/2 c. oil2/3 c applesauce1 T vanilla2 c. shredded zucchini1/2 c. flour1 c. whole wheat flour1 c. carbquik1/2 t salt3 t baking powder1/2 t baking soda2 T ground cinnamon1 c fresh blueberries3/4 c brown sugar1 c Splenda
Prehheat oven to 350 degrees. Lightly grease 2 loaf pans. In large bowl beat together eggs, oil, vanilla and sugars, then add applesauce and zucchini and mix. Beat in flours, , baking powder baking soda, cinnamon and salt. Gently fold in blueberries. Transfer to baking pans.
Bake 45 min, cool for 10 min.
