1 eggplantsaltSeeds of Change Korma Simmer Sauce1 leaf kale (optional)1 handful sliced almonds (optional)bread / rice / any kind of vehicle for the Korma
Peel eggplant, dice into 1 inch cubes. Salt the cubes and set aside for approximately 30 minutes. After 30 minutes, drain the fluid which has been released and rinse the cubes well. Pour 1 tbsp olive oil into pan, heat up the eggplant cubes until tender, or about 5 minutes. Pour in the Seeds of Change Korma sauce, allow to simmer for 20 minutes. Meantime, shred the kale leaf fine and toss in the kale and almonds to the simmering mixture. (Optional)
