Asian Zucchini Fritters

Zucchini - 1 Cup ShreddedRed Onions - .25C Chopped FineShallots - 2TB Chopped fineFresh grated ginger - to tasteSalt/PepperWhite or Whole Wheat Flour (about .25C or until mixture is of "pancake" batter consistency)1 EggAlso can add in Rice Vinegar and Sirracha to taste
Mix all ingredients together.
Heat non-stick skillet or spray regular skillet with non stick spray.
Put about 2 spoonfuls of batter in pan for one fritter
Brown on both sides.
I stick mine in the oven while the others are cooking up.
If you don't mind the extra fat, you could fry in a bit of oil for a crispier fritter.
