1 1/2 lbs Fingerling potatoessalt2 c frisee1/4 small red onion, sliced thin1/2 c toasted walnuts, choppedDressing1.5 T balsamic vinegar2 t Dijon mustard.5 t maple syrup.25 c olive oilsalt and pepper
1. Put water and potatoes into pot, bring to boil and simmer for 12 - 15 mins. Cool slightly and slice diagonally into 1/2" pieces. Salt
2. Combine dressing ingredients and pour over potatoes. Add frisee, onion and walnuts and mix gently
