Pesto Chicken Pizza using CARBQUICK (tm) baking mix

Ingredients
1.5 cups of CARBQUICK baking mix1/3 cup hot water1/4 cup of CHRISTOPHER RANCH pesto sauce1/2 cup of shredded mozzarella cheese (part skim)4 oz cooked, cubed or shredded chickenchopped basil2 TBSP chopped red bell pepper2 TBSP of thinly sliced red onion2 tsp olive oil for the bottom of the pizza pansprinkling of Italian seasoning
Directions
Add the 1/3 cup of hot water to the 1 and 1/2 cups of CARBQUICK baking mix, kneading until the dough forms a ball and is no longer sticky. Spread the bottom of the pizza pan with the 2 tsp of olive oil, and sprinkle with some italian seasoning. Shape the dough along the bottom of the pan. Top the dough with the 1/4 cup of pesto sauce, the mozzarella cheese, the cooked cubed chicken, and follow with the basil, red bell pepper, and onion. Bake on a low rack in a 450* oven for 15 minutes, or until crust is golden and cheese is bubbly. I calculated for this pizza to be cut into four pieces, each a serving, but you could make the slices smaller!
