2 Large Eggs1/2 cups fresh Spinach2 fresh medium Mushrooms, sliced1/4 cup chopped Onions1 Tbsp chopped Scallions or Green Onions1/4 cup chopped Green Bell Peppers1/4 cup shredded Cheese (Cheddar)A splash of 2% Milk1 Tbsp Olive Oil
Chop onions, scallions, and bell peppers. Slice mushrooms. Break spinach by hand. Mix eggs and milk thoroughly with salt, pepper and garlic powder to taste. Heat olive oil in skillet, saute veggies until spinach is wilted and mushrooms are semi-soft, then set aside. Let egg mixture cook in skillet flat until set and add veggie mix with cheese on one half of egg mix. Carefully flip free half onto the veggie half and heat through.
