Matthias's Healthified Blueberry Muffins

Ingredients
3/4 c unbleached white flour3/4 c whole wheat flour1/4 c flax seed meal1/3 sugar or honey (nutritinional info here is using honey)2 tsp baking powder1/4 tsp salt1 beaten egg3/4 c almond milk1/4 c applesauce1 c fresh blueberries
Directions
Preheat oven to 400. Grease tins.
Mix first 6 dry ingredients in a large bowl.
In separate, smaller bowl, mix egg, milk and applesauce.
Make a well in the dry ingredients, pour in wet, and stir just until evenly moistened.
Fold in blueberries.
Fill muffins tins about 3/4 full.
Bake 18 minutes for regular sized or 10 minutes for minis.

Serving Size: Makes 12 regular sized muffins or 24 mini muffins. Serving size is 1 regular or 2 minis.
