Slow Cooker BBQ Pulled Pork and low-fat Cheese Grits

Ingredients
3 lbs pork shoulder/boston butt1 can Coca-Cola1 bottle of BBQ sauce1 cup quick cook grits3/4 cup reduced fat cheddar cheese1 cup skim milk1 cup water.5 tsp salt.25 tsp black pepper
Directions
Place pork shoulder in slow cooker with bbq sauce and 1 can Coca-Cola. Cook on low for 8-10 hours. Prepare grits when ready to serve pork. To prepare grits, combine milk, water and salt in a saucepan over medium heat; heat until almost boiling. Reduce the heat to low, whisk in grits and cook, whisking constantly, until they start to thicken, 3 to 4 minutes. Remove the pan from the heat and whisk in 1/2 cup cheese. Cover and let stand until most of the liquid has been absorbed and the grits are creamy, 2 to 3 minutes. Divide into bowls, sprinkle with the remaining cheese and serve.
