Baked Potato Salad

Ingredients
5 lbs Red Skin Potatoes, cleaned and cubed2 c light sour cream2 c mayo2 c shredded cheddar cheese4 Tbs (4 oz) Turkey Bacon Bits2 Tbs diced scallions
Directions
Clean, cube, and boil potatoes for 15 minutes

Mix sour cream and mayo

Drain potatoes and place into large bowl.

Add cheese, scallions, and bacon

Add dressing and mix well

Cover and chill until ready to serve

Serving Size: makes 12.5 - 1/4 lb servings
