Caramelized Onions, Paleo Style 57g or 1/4 cup

Ingredients
4 large onions quartered & sliced 1/4" thick2 Tbsp macadamia nut oil2 Tbsp unsalted Kerrygold butter
Directions
Melt butter & oil in skillent (I do use a non stick skillet). Stir onions in to coat with butter/oil. Cook over medium to medium-high heat for about 20-30 minutes then reduce heat to medium-low. DO NOT stir often, you not get good caramelizing if you do. I probably stir may once every 6 to 10 minutes. Try stirring after 4 minutes. If the onions are beginning to brown, then you've nailed the timing, if not don't stir for another 6 minutes until you find the right timing.

Once the onions are nice & brown & reduce by almost half, turn off the heat & cover. Let sit for 10-15 minutes. Uncover & serve - all the good bits will scrape right up with the onions, covering it up makes this happen!
